Method
 

Step-by-Step Instructions
  1. Preheat your oven to 350°F (175°C) and spray a 9x13-inch baking dish with cooking spray.
  2. In a bowl, toss 3 pounds of sliced onions with salt, dry mustard, garlic powder, smoked paprika, and cayenne pepper.
  3. Layer half of the seasoned onion rings evenly in the prepared baking dish.
  4. Sprinkle 2 ounces each of shredded cheddar and smoked Gouda over the first layer of onions.
  5. Add the remaining onion rings on top, pressing down gently, followed by remaining cheese.
  6. Sprinkle 1.25 ounces of grated Parmesan cheese on top and scatter diced butter.
  7. Cover with aluminum foil and bake for 45 minutes.
  8. Remove foil and bake uncovered for an additional 30 minutes until golden brown.
  9. Garnish with chopped parsley if desired before serving.
