Method
 

Instructions
  1. Preheat your oven to 350 degrees Fahrenheit.
  2. In a large skillet, heat vegetable oil over medium heat and sauté diced onion until soft.
  3. Add minced garlic and cook for 1 minute, then stir in ground beef and cook until browned.
  4. Season with chili powder, ground cumin, salt, and black pepper, mixing well.
  5. Pour in red enchilada sauce and let it simmer for 2 minutes.
  6. Spread a thin layer of enchilada sauce in a 9x13 inch baking dish.
  7. Layer four corn tortillas at the bottom of the dish.
  8. Add half of the beef mixture over the tortillas and top with 1 cup of shredded cheese.
  9. Repeat layering with remaining tortillas, beef mixture, and another cup of cheese.
  10. Pour remaining enchilada sauce over the top layer.
  11. Cover with foil and bake for 20 minutes, then uncover and bake for an additional 5-10 minutes.
  12. Let the casserole rest for 5 minutes before slicing and serving.
