- Preheat your oven to 350 degrees Fahrenheit.
- In a large skillet, heat vegetable oil over medium heat and sauté diced onion until soft.
- Add minced garlic and cook for 1 minute, then stir in ground beef and cook until browned.
- Season with chili powder, ground cumin, salt, and black pepper, mixing well.
- Pour in red enchilada sauce and let it simmer for 2 minutes.
- Spread a thin layer of enchilada sauce in a 9x13 inch baking dish.
- Layer four corn tortillas at the bottom of the dish.
- Add half of the beef mixture over the tortillas and top with 1 cup of shredded cheese.
- Repeat layering with remaining tortillas, beef mixture, and another cup of cheese.
- Pour remaining enchilada sauce over the top layer.
- Cover with foil and bake for 20 minutes, then uncover and bake for an additional 5-10 minutes.
- Let the casserole rest for 5 minutes before slicing and serving.
