  • 8 large Flour tortillas Provide a sturdy wrap
  • 2 cups Cooked shrimp Peeled and deveined
  • 1 cup Alfredo sauce Store-bought or homemade
  • 1 cup Ricotta cheese
  • 1 cup Shredded mozzarella cheese Melty goodness
  • 0.5 cup Grated Parmesan cheese
For the Spinach Mixture
  • 1 cup Frozen spinach Thawed and drained
  • 2 cloves Garlic Minced
  • 1 teaspoon Italian seasoning
  • Salt and pepper To taste
For the Baking
  • 2 tablespoons Olive oil
  • Fresh parsley Chopped, for garnish

Method
 

Step-by-Step Instructions
  1. Preheat your oven to 375°F (190°C).
  2. In a large skillet, heat olive oil over medium heat. Add minced garlic and sauté for about 1 minute.
  3. Add the cooked shrimp to the skillet and stir gently, cooking for 2-3 minutes.
  4. In a bowl, combine the sautéed shrimp with ricotta cheese, half of the mozzarella cheese, Parmesan cheese, thawed spinach, and Italian seasoning.
  5. Lay a flour tortilla flat, spoon the filling into the center, and roll it tightly.
  6. Pour Alfredo sauce into the bottom of a baking dish, arrange roll-ups seam-side down.
  7. Pour remaining Alfredo sauce over the top of the roll-ups.
  8. Sprinkle remaining mozzarella cheese on top.
  9. Cover with aluminum foil and bake for 20 minutes, uncover and bake for an additional 10-15 minutes.
  10. Let cool for about 5 minutes, then garnish with chopped parsley before serving.
