- Preheat your oven to 375°F (190°C).
- In a large skillet, heat olive oil over medium heat. Add minced garlic and sauté for about 1 minute.
- Add the cooked shrimp to the skillet and stir gently, cooking for 2-3 minutes.
- In a bowl, combine the sautéed shrimp with ricotta cheese, half of the mozzarella cheese, Parmesan cheese, thawed spinach, and Italian seasoning.
- Lay a flour tortilla flat, spoon the filling into the center, and roll it tightly.
- Pour Alfredo sauce into the bottom of a baking dish, arrange roll-ups seam-side down.
- Pour remaining Alfredo sauce over the top of the roll-ups.
- Sprinkle remaining mozzarella cheese on top.
- Cover with aluminum foil and bake for 20 minutes, uncover and bake for an additional 10-15 minutes.
- Let cool for about 5 minutes, then garnish with chopped parsley before serving.
