  • 3 pieces ripe bananas mashed
  • 4 tablespoons melted vegan butter
  • ¾ cup maple syrup
  • 1 cup almond or oat milk

  • 2 oz vegan cream cheese melted
For the Glaze
  • 1 cup powdered sugar
  • 2 tablespoons melted vegan butter
  • 2 oz softened vegan cream cheese

Method
 

Step-by-Step Instructions
  1. Preheat your oven to 350°F (175°C) and grease a 9×5-inch loaf pan.
  2. In a large mixing bowl, combine the mashed ripe bananas, melted vegan butter, maple syrup, almond or oat milk, and vanilla extract until smooth.
  3. In another bowl, whisk together the flour, baking powder, baking soda, cinnamon, and salt.
  4. Gradually fold the dry ingredients into the wet mixture until just combined; some lumps are okay.
  5. Add the rolled oats and fold them into the batter evenly.
  6. In a small bowl, mix the light brown sugar, melted vegan butter, and a pinch of cinnamon to create the swirl mixture.
  7. Pour half of the batter into the loaf pan and drizzle half of the cinnamon swirl mixture over it. Add the remaining batter and swirl the rest on top.
  8. Bake for 45–55 minutes or until a toothpick comes out clean. Let the bread cool in the pan for 10 minutes.
  9. Transfer the bread to a wire rack to cool completely.
  10. For the glaze, whisk together powdered sugar, melted vegan butter, and softened vegan cream cheese until smooth.
  11. Drizzle the glaze over the cooled bread before slicing and serving.
