  • 2 tablespoons Honey for drizzling
  • 2 teaspoons Fresh thyme leaves for garnish

Preparation and Cooking
  1. Preheat the oven to 425°F (220°C) and prepare a baking sheet lined with parchment paper.
  2. Wash and peel the sweet potatoes, then slice them into ½-inch thick rounds.
  3. In a mixing bowl, toss the sweet potato rounds with olive oil, salt, and pepper to coat.
  4. Arrange the seasoned sweet potato rounds in a single layer on the prepared baking sheet.
  5. Roast the sweet potatoes for 20–25 minutes, flipping halfway through, until edges are golden.
  6. Remove and let cool slightly, then warm the honey in a microwave for about 10 seconds.
  7. Drizzle the honey over the roasted sweet potato rounds and sprinkle with crumbled feta and thyme.
  8. Serve warm and enjoy!
