- Preheat the oven to 425°F (220°C) and prepare a baking sheet lined with parchment paper.
- Wash and peel the sweet potatoes, then slice them into ½-inch thick rounds.
- In a mixing bowl, toss the sweet potato rounds with olive oil, salt, and pepper to coat.
- Arrange the seasoned sweet potato rounds in a single layer on the prepared baking sheet.
- Roast the sweet potatoes for 20–25 minutes, flipping halfway through, until edges are golden.
- Remove and let cool slightly, then warm the honey in a microwave for about 10 seconds.
- Drizzle the honey over the roasted sweet potato rounds and sprinkle with crumbled feta and thyme.
- Serve warm and enjoy!
