- Bring a large pot of salted water to a rolling boil. Add lasagna noodles and cook until al dente, about 8-10 minutes. Drain and lay flat to cool.
- In a large mixing bowl, combine ricotta, spinach, Parmesan, salt, and black pepper. Mix until well blended.
- Preheat your oven to 375°F (190°C). Spread 1 cup of marinara sauce on the bottom of a 9x13 inch baking dish.
- Spread 2-3 tablespoons of the ricotta filling along each noodle. Roll tightly and place seam-side down in the dish.
- Pour remaining marinara sauce over the roll-ups and sprinkle mozzarella cheese on top.
- Cover with foil and bake for 25 minutes, then remove foil and bake for an additional 15 minutes until cheese is bubbly and golden brown.
- Let cool for a few minutes before serving. Garnish with fresh basil if desired.
