Step‑by‑Step Instructions for Muffin Breakfast Pizza
  1. Cook the sausage in a cast-iron skillet over medium heat until thoroughly browned, about 5-7 minutes. Leave ¼ cup of drippings in the pan.
  2. Add flour to the reserved sausage drippings and cook for 2-3 minutes until golden. Gradually whisk in milk until the sauce thickens, about 4-5 minutes.
  3. Cut English muffins in half and toast until golden brown, about 3-5 minutes.
  4. In a non-stick skillet, scramble the eggs with a splash of milk over low heat until fluffy and slightly runny, about 4-5 minutes.
  5. Assemble pizzas on a baking sheet: toasted muffin halves, sawmill gravy, scrambled eggs, cheddar cheese, and crumbled sausage.
  6. Broil assembled pizzas until the cheese melts and bubbles, about 2-3 minutes.
