  • 2 tablespoons Miso paste organic
  • 1 tablespoon Smooth peanut butter
  • 4 oz Dry ramen noodles
For the Toppings
  • 2 soft-boiled Eggs
  • cup Frozen sweet corn, thawed
  • 1 cup Bean sprouts
  • 2 tablespoons Scallions, chopped
  • 1 tablespoon White sesame seeds for garnish

Cooking Steps
  1. In a large pot, heat vegetable oil over medium heat. Add onions, tomatoes, shiitake mushrooms, and garlic. Sauté for about 5 minutes until tomatoes are soft and onions are translucent.
  2. Pour in water and bring to a boil.
  3. Reduce heat slightly and stir in miso paste and peanut butter. Simmer uncovered for 5 minutes.
  4. Add dry ramen noodles to the boiling soup. Cook for 2-3 minutes, stirring gently.
  5. Ladle the ramen into bowls, ensuring each has noodles and broth.
  6. Top with sweet corn, bean sprouts, scallions, and a soft-boiled egg. Sprinkle with sesame seeds to serve.
