  • ½ cup vinegar White or apple cider vinegar

  • ¾ cup sugar
  • 2 teaspoons minced garlic
  • 1 tablespoon grated ginger

Method
 

Step-by-Step Instructions
  1. Coat the chicken by placing the chicken in a bowl and tossing with cornstarch until coated.
  2. Sauté the chicken in a skillet with vegetable oil for 5-7 minutes until golden brown.
  3. Stir-fry red and green bell peppers along with onion for 3-4 minutes in the same skillet.
  4. Prepare the sauce by mixing vinegar, ketchup, soy sauce, sugar, minced garlic, and grated ginger.
  5. Combine the sautéed chicken with the stir-fried vegetables and pour the sauce over it.
  6. Add pineapple chunks and allow to simmer for 5 minutes.
  7. Thicken the sauce by adding a cornstarch slurry if desired.
  8. Season to taste with salt and pepper.
  9. Serve over rice or noodles and enjoy!
