  • 2 whole Italian sub roll or hoagie rolls Choose a sturdy bread
For the Cheese
  • 4 slices Provolone cheese
For the Meats
  • 4 oz Genoa salami
  • 4 oz Deli ham
  • 2 oz Pepperoni optional

  • 3 cups Iceberg lettuce shredded
  • ½ cup Red onion thinly sliced
  • 1 medium Ripe tomato sliced
  • ½ cup Pepperoncini drained
For the Dressing
  • ½ cup Mayonnaise

  • 1 pinch Red pepper flakes optional
  • 2 tablespoon Grated Parmesan cheese optional
  • 1 tablespoon Unsalted butter or olive oil for toasting
  • 1 pinch Sugar optional

Method
 

Step-by-Step Instructions
  1. Prepare the vegetables: Remove any limp leaves from the lettuce, slice thinly, and soak the onion if necessary. Slice the tomato and drain the pepperoncini.
  2. Make the grinder salad dressing: Combine mayonnaise, red wine vinegar, and olive oil in a bowl. Whisk in remaining dressing ingredients until smooth.
  3. Build the grinder salad: Toss lettuce, onion, and pepperoncini in the dressing. Adjust seasoning and add Parmesan if desired. Set aside.
  4. Prepare and toast the roll: Preheat oven broiler and toast the rolls cut-side up with butter or oil for 1-3 minutes.
  5. Add cheese and melt: Layer provolone slices on the toasted rolls and return to broiler until melted.
  6. Layer the meats: Arrange Genoa salami, ham, and optional pepperoni on the bottom roll.
  7. Add tomatoes and season: Place tomato slices on the meats and season with salt and pepper.
  8. Top with grinder salad: Pile the dressing-coated salad over the tomato layer.
  9. Close and set the sandwich: Fold the top of the roll and let rest for 3-5 minutes.
  10. Slice and serve: Cut the sandwich diagonally and serve warm.
