- Preheat your oven to 325°F (165°C) and prepare your roasting pan with a roasting rack.
- If the ham has a thick skin, score the surface in a diamond pattern with shallow cuts.
- Place the ham cut side down in the roasting rack and cover loosely with aluminum foil.
- Combine the maple syrup, bourbon, brown sugar, Dijon mustard, ground cinnamon, ground cloves, black pepper, and salt in a saucepan. Heat until simmering and sugars dissolve.
- Bake the ham for 1.5 hours, then brush with glaze and return to oven for 30 minutes, basting every 10 minutes.
- Optional: Add whole cloves in the last 15 minutes for aroma and decoration.
- Remove from oven when caramelized and internal temperature reaches 140°F (60°C). Allow to rest for at least 15 minutes.
