Step‑by‑Step Instructions
  1. Preheat your oven to 325°F (165°C) and prepare your roasting pan with a roasting rack.
  2. If the ham has a thick skin, score the surface in a diamond pattern with shallow cuts.
  3. Place the ham cut side down in the roasting rack and cover loosely with aluminum foil.
  4. Combine the maple syrup, bourbon, brown sugar, Dijon mustard, ground cinnamon, ground cloves, black pepper, and salt in a saucepan. Heat until simmering and sugars dissolve.
  5. Bake the ham for 1.5 hours, then brush with glaze and return to oven for 30 minutes, basting every 10 minutes.
  6. Optional: Add whole cloves in the last 15 minutes for aroma and decoration.
  7. Remove from oven when caramelized and internal temperature reaches 140°F (60°C). Allow to rest for at least 15 minutes.
