Step-by-Step Instructions
  1. In a large skillet, heat 2 tablespoons of olive oil over medium heat. Add 1 chopped medium onion and sauté until translucent, about 3-5 minutes.
  2. Stir in 2 minced garlic cloves and cook for an additional minute until fragrant. Then add 1 pound of ground beef, breaking it up with a wooden spoon. Cook until browned, approximately 6-8 minutes. Drain any excess fat.
  3. Add 1 sliced red bell pepper and 1 sliced zucchini to the skillet. Cook for about 5 minutes until the vegetables begin to soften.
  4. Stir in 1 cup of halved cherry tomatoes, 1 teaspoon of dried oregano, 1 teaspoon of ground cumin, ½ teaspoon of paprika, and ¼ teaspoon of red pepper flakes. Add salt and black pepper to taste. Cook for an additional 3-4 minutes.
