- Preheat your oven to 200°C (390°F) or 180°C (350°F) if using a fan-forced setting.
- Carefully cut a pocket into each chicken breast, seasoning with half of the salt and pepper.
- Melt butter in a skillet over high heat, then sauté the chopped mushrooms for about 3 minutes.
- Add minced garlic, dried thyme, and remaining salt and pepper to the skillet and cook for 2 more minutes.
- Stir in baby spinach and cook for 30 seconds until wilted.
- Stuff the mushroom and spinach mixture into each chicken pocket and top with cheese.
- Seal the openings of the chicken breasts tightly with toothpicks.
- Sear each side of the stuffed chicken in a skillet with oil over medium-high heat for about 1.5 minutes.
- Transfer the skillet to the preheated oven and bake for approximately 15 minutes.
- Remove from the oven and let rest for 5 minutes before serving.
