Method
 

Directions
  1. Preheat your oven to 200°C (390°F) or 180°C (350°F) if using a fan-forced setting.
  2. Carefully cut a pocket into each chicken breast, seasoning with half of the salt and pepper.
  3. Melt butter in a skillet over high heat, then sauté the chopped mushrooms for about 3 minutes.
  4. Add minced garlic, dried thyme, and remaining salt and pepper to the skillet and cook for 2 more minutes.
  5. Stir in baby spinach and cook for 30 seconds until wilted.
  6. Stuff the mushroom and spinach mixture into each chicken pocket and top with cheese.
  7. Seal the openings of the chicken breasts tightly with toothpicks.
  8. Sear each side of the stuffed chicken in a skillet with oil over medium-high heat for about 1.5 minutes.
  9. Transfer the skillet to the preheated oven and bake for approximately 15 minutes.
  10. Remove from the oven and let rest for 5 minutes before serving.
