  • 9 ounces cheese tortellini fresh or frozen
  • 1 cup cherry tomatoes halved
  • 3 cups baby spinach
  • ½ cup beef broth
  • ½ cup grated Parmesan cheese

Step-by-Step Instructions
  1. Begin by heating a large skillet over medium-high heat. Once heated, add 1 tablespoon of olive oil.
  2. Season 1 pound of sirloin steak with garlic powder, onion powder, salt, and pepper. Sear in the skillet for 2-3 minutes until browned, then set aside.
  3. In the same skillet, add the remaining tablespoon of olive oil and toss in 1 cup of halved cherry tomatoes. Sauté for about 2 minutes.
  4. Stir in 3 cups of baby spinach and cook for an additional 1-2 minutes until wilted.
  5. Pour in ½ cup of beef broth and bring to a gentle simmer. Add in 1 package of cheese tortellini and cook according to package instructions, stirring occasionally.
  6. Once the tortellini is cooked, return the seared steak bites to the skillet, sprinkle in ½ cup of grated Parmesan cheese, and mix until the cheese melts.
  7. Taste and adjust seasonings with salt and pepper as desired.
  8. Serve hot, garnished with fresh basil if desired.
