- Begin by heating a large skillet over medium-high heat. Once heated, add 1 tablespoon of olive oil.
- Season 1 pound of sirloin steak with garlic powder, onion powder, salt, and pepper. Sear in the skillet for 2-3 minutes until browned, then set aside.
- In the same skillet, add the remaining tablespoon of olive oil and toss in 1 cup of halved cherry tomatoes. Sauté for about 2 minutes.
- Stir in 3 cups of baby spinach and cook for an additional 1-2 minutes until wilted.
- Pour in ½ cup of beef broth and bring to a gentle simmer. Add in 1 package of cheese tortellini and cook according to package instructions, stirring occasionally.
- Once the tortellini is cooked, return the seared steak bites to the skillet, sprinkle in ½ cup of grated Parmesan cheese, and mix until the cheese melts.
