Method
 

Step-by-Step Instructions
  1. Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. Roll out your thawed puff pastry sheet on a lightly floured surface.
  3. Cut the puff pastry into 2-inch squares.
  4. Place a slice of Brie in the center of each square, drizzle honey, and season with salt, pepper, and thyme if using.
  5. Fold corners of the pastry square over the Brie and pinch to seal.
  6. Roll each sealed bite in the chopped pistachios until fully coated.
  7. Arrange bites on the prepared baking sheet, spaced about an inch apart.
  8. Brush the tops with beaten egg for a glossy finish.
  9. Bake for 15-20 minutes until golden brown and puffed.
  10. Remove from the oven and let cool for a few minutes before serving warm.
