  • 1 large Cucumber Peeled and thinly sliced
  • 1 small Red onion Thinly sliced
  • 10 leaves Fresh mint Finely chopped
  • 10 leaves Fresh cilantro Finely chopped
For the Dressing
  • 2 tablespoons Lime juice
  • 1 tablespoon Honey
  • 1 tablespoon Olive oil
  • Salt To taste
  • Pepper To taste

Method
 

Preparation Steps
  1. Peel and core the ripe pineapple, then cut it into bite-sized pieces.
  2. Peel the cucumber and slice it thinly.
  3. Thinly slice the red onion.

  5. Stir in the chopped mint and cilantro.
  6. In a small bowl, whisk together lime juice, honey, and olive oil.
  7. Pour the dressing over the salad and gently toss to combine.
  8. Sprinkle salt and pepper over the salad, add jalapeño if using, and toss gently.
