  • cup peanut butter
  • 3 tablespoons coconut aminos
  • 1 teaspoon lemon zest
  • 2 tablespoons lemon juice
  • 1 tablespoon honey
  • 1 tablespoon sesame oil
  • 2 tablespoons rice wine vinegar
  • to taste salt
  • to taste pepper
  • 3-5 tablespoons water adjust for consistency
Salad
  • 2 cups shredded cabbage
  • 1 cup shredded carrots
  • 2 pieces green onions sliced
  • 1 piece red bell pepper chopped
  • ¼ cup fresh cilantro finely chopped
  • ¼ cup chopped peanuts for garnish

Method
 

Prepare the Dressing
  1. In a large mixing bowl, whisk together the peanut butter, coconut aminos, lemon zest, lemon juice, honey, sesame oil, and rice wine vinegar until smooth, about 2-3 minutes.
Thin the Dressing
  1. Gradually add water, a tablespoon at a time, until reaching your desired consistency.
Combine the Vegetables
  1. Add shredded cabbage, shredded carrots, sliced green onions, chopped red bell pepper, chopped cilantro, and chopped peanuts into the bowl with the dressing, gently folding to coat.
Toss and Serve
  1. Toss everything together thoroughly, then chill in the refrigerator for up to an hour before serving.
