Step-by-Step Instructions
  1. Preheat your oven to 200°C (about 400°F) and line a baking sheet with parchment paper.
  2. Peel the golden beets and sweet potato, then slice them into even wedges of about 1 cm thick.
  3. Toss the sliced golden beets and sweet potato with olive oil, sea salt, and black pepper in a large bowl.
  4. Spread the seasoned vegetables on the prepared baking sheet in a single layer and roast for 25–30 minutes.
