Method
 

Instructions
  1. Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a large mixing bowl, combine the softened unsalted butter, granulated sugar, light brown sugar, and honey. Beat together until light and fluffy, about 2-3 minutes.
  3. Add the large egg and vanilla extract. Beat until fully combined and smooth.
  4. In a separate bowl, whisk together the flour, baking soda, and salt. Gradually add this mixture to the wet ingredients, mixing on low speed until just combined.
  5. Gently fold in the chopped shelled pistachios using a spatula.
  6. Scoop rounded portions of the dough, rolling into balls, and place them on the prepared baking sheet about 2 inches apart.
  7. Sprinkle a touch of flaky sea salt on top of each cookie dough ball.
  8. Bake for 10 to 12 minutes until the edges are golden and the centers remain soft.
  9. Let the cookies cool on the baking sheet for 5 minutes before transferring them to a wire rack to cool completely.
