Step-by-Step Instructions
  1. Heat 2 tablespoons of olive oil in a large skillet over medium heat. Once the oil shimmers, add the 1 pound of sausage, breaking it into pieces. Cook for 5–7 minutes, stirring occasionally, until browned.
  2. Stir in 2 medium sweet potatoes, cubed. Cook for another 5 minutes, allowing the sweet potatoes to soften slightly.
  3. In a small bowl, whisk together ¼ cup of honey, 4 cloves of minced garlic, 2 tablespoons of soy sauce, 1 teaspoon of paprika, ½ teaspoon of salt, and ½ teaspoon of pepper. Pour over the sausage and sweet potatoes.
  4. Cover the skillet with a lid and reduce the heat to low. Allow to simmer for 10 minutes, or until the sweet potatoes are fork-tender.
  5. Remove from heat and sprinkle with freshly chopped parsley. Serve hot.
