  • 2 tablespoons ranch dressing light or regular

  • ¼ cup shredded sharp cheddar cheese
  • 1 tablespoon grated Parmesan cheese optional

  • ¼ cup red onion chopped
  • ¼ cup bell pepper any color, chopped
  • ¼ cup canned corn kernels optional, drained
  • 1 tablespoon chopped fresh cilantro or parsley optional
For Seasoning
  • ¼ teaspoon garlic powder
  • ¼ teaspoon onion powder
  • ¼ teaspoon smoked paprika or regular paprika
  • ¼ teaspoon dried dill or Italian seasoning optional

For Cooking
  • 1 teaspoon olive oil or avocado oil for greasing
  • 1 spray cooking spray optional

Method
 

Step-by-Step Instructions
  1. Prepare the chicken by shredding or dicing cooked chicken. For fresh chicken, season and cook until done.
  2. Mix Greek yogurt and ranch dressing in a bowl, then add garlic powder, onion powder, smoked paprika, salt, and pepper. Fold in the chicken.
  3. Stir in red onion, bell pepper, corn, and cilantro or parsley.
  4. Combine cheeses in a small bowl.
  5. Assemble quesadillas with cheese, chicken filling, and remaining cheese.
  6. Heat skillet and add oil or cooking spray. Cook one quesadilla until golden brown, then flip to cook the other side.
  7. Repeat with the second quesadilla.
