  • 2 cups bell peppers sliced
  • 1 medium red onion sliced
  • 2 cups broccoli florets
  • 1 medium zucchini sliced
  • 2 cups baby potatoes halved
For the Seasoning
  • 2 tablespoons olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon paprika
  • 1 teaspoon salt
  • 1 teaspoon pepper
For Garnish
  • 2 tablespoons fresh parsley optional

Method
 

Step-by-Step Instructions
  1. Preheat your oven to 400°F (200°C).
  2. Wash and chop all the vegetables: slice the bell peppers, red onion, and zucchini, and halve the baby potatoes. Place them in a large mixing bowl.
  3. Cut the Italian sausage into bite-sized pieces and add to the bowl with the veggies.
  4. Drizzle olive oil over the mixture, followed by garlic powder, onion powder, paprika, salt, and pepper. Toss to coat evenly.
  5. Spread the sausage and veggies in a single layer on a large sheet pan.
  6. Bake for 30-35 minutes, stirring halfway through cooking for even roasting.
  7. Remove from the oven, garnish with fresh parsley, and allow to cool for a couple of minutes before serving.
