- Preheat your oven to 400°F (200°C).
- Wash and chop all the vegetables: slice the bell peppers, red onion, and zucchini, and halve the baby potatoes. Place them in a large mixing bowl.
- Cut the Italian sausage into bite-sized pieces and add to the bowl with the veggies.
- Drizzle olive oil over the mixture, followed by garlic powder, onion powder, paprika, salt, and pepper. Toss to coat evenly.
- Spread the sausage and veggies in a single layer on a large sheet pan.
