  • 1 teaspoon Pepper
  • 1 teaspoon Dried oregano
  • 1 teaspoon Dried thyme
  • ¼ cup Fresh parsley, chopped for garnishing

Method
 

Cooking Instructions
  1. Preheat your oven to 425°F (220°C).
  2. Wash the broccoli, cauliflower, carrots, and bell peppers thoroughly. Chop the vegetables into uniform sizes.
  3. In a mixing bowl, add all chopped vegetables, drizzle with olive oil, and sprinkle minced garlic, salt, pepper, oregano, and thyme. Toss well.
  4. Spread the vegetables on a baking sheet in a single layer.
  5. Roast for 25-30 minutes, stirring halfway to promote even cooking.
  6. Remove from oven, transfer to a serving dish, and garnish with fresh parsley before serving.
