- Preheat a skillet over medium heat and cook the thick-cut bacon for 8–10 minutes until crispy.
- In a medium bowl, crack the eggs and whisk with milk, salt, and pepper until frothy.
- Pour the egg mixture into the skillet, scrambling gently until just set, about 3 to 5 minutes.
- Lay out two slices of bread, sprinkle with cheese, add eggs and bacon, then top with more cheese.
- Butter the outside of each sandwich and grill in a skillet for 3 to 4 minutes per side until golden.
- Slice each sandwich in half and sprinkle with chives or green onions before serving.
