Cooking Steps
- Melt 2 tablespoons of butter in a skillet over medium heat. Add 4 chicken thighs, skin-side down, and sear for 5-7 minutes until golden brown. Flip and brown the other side for 5 minutes.
- Pour 1 cup of chicken broth into the skillet, along with 1 teaspoon of garlic powder, 1 teaspoon of salt, and 1 tablespoon of minced garlic. Stir, bring to a gentle simmer, cover, and cook for 25-30 minutes.
- Remove the chicken, reduce heat, and add ½ cup of heavy cream. Stir for about 5 minutes until the gravy thickens.
- In a mixing bowl, combine 1 cup of prepared mashed potatoes, ¼ cup of shredded cheese, and 2 tablespoons of chopped chives. Mix until the cheese is melted.
