Ingredients
  

For the Vegetables
  • 2 cups Fresh spinach
  • 8 oz Mushrooms
For the Chicken
  • 1 lb Boneless, skinless chicken breasts
  • 2 tablespoon Olive oil
For the Seasoning
  • 1 teaspoon Garlic powder
  • 1 teaspoon Onion powder
  • 1 teaspoon Dried oregano
  • 1 teaspoon Paprika
  • 1 teaspoon Salt
  • 1 teaspoon Pepper
  • ¼ teaspoon Red pepper flakes (optional)
For the Cheese
  • 1 cup Shredded mozzarella cheese
  • ½ cup Grated Parmesan cheese

Method
 

Cooking Steps
  1. Preheat your oven to 375°F (190°C).
  2. In a large skillet, heat 2 tablespoons of olive oil over medium heat and sauté sliced mushrooms for 5-7 minutes until soft and browned.
  3. Add 2 cups of chopped spinach to the skillet and sauté for an additional 2-3 minutes until wilted.
  4. In a mixing bowl, season 1 pound of bite-sized chicken with garlic powder, onion powder, oregano, paprika, salt, and pepper. Mix well.
  5. Spread the seasoned chicken in a large baking dish, then layer with the sautéed spinach and mushrooms.
  6. Top with 1 cup of shredded mozzarella cheese and ½ cup of grated Parmesan cheese. Add red pepper flakes if desired.
  7. Cover with foil and bake for 25-30 minutes until chicken is cooked through.
  8. Remove foil and bake for an additional 5-10 minutes until cheese is bubbly and golden brown.
  9. Let cool for a few minutes before serving.
