Cooking Steps
- Preheat your oven to 375°F (190°C).
- In a large skillet, heat 2 tablespoons of olive oil over medium heat and sauté sliced mushrooms for 5-7 minutes until soft and browned.
- Add 2 cups of chopped spinach to the skillet and sauté for an additional 2-3 minutes until wilted.
- In a mixing bowl, season 1 pound of bite-sized chicken with garlic powder, onion powder, oregano, paprika, salt, and pepper. Mix well.
- Spread the seasoned chicken in a large baking dish, then layer with the sautéed spinach and mushrooms.
- Top with 1 cup of shredded mozzarella cheese and ½ cup of grated Parmesan cheese. Add red pepper flakes if desired.
- Cover with foil and bake for 25-30 minutes until chicken is cooked through.
- Remove foil and bake for an additional 5-10 minutes until cheese is bubbly and golden brown.
- Let cool for a few minutes before serving.
