Coconut Lamb Curry Instructions
  1. Heat the oil in a large skillet over medium heat. Add the cubed lamb, browning the meat on all sides for about 5–7 minutes.
  2. Sauté onions and garlic for about 5 minutes until soft. Stir occasionally.
  3. Add garam masala, curry powder, cumin seeds, and salt. Cook for another minute to toast the spices.
  4. Transfer the seasoned lamb mixture to the slow cooker.
  5. Pour in coconut milk and add tomato paste, potatoes, and carrots. Stir gently to combine.
  6. Cover the slow cooker and set it to cook on high for 4–6 hours or low for 8–10 hours.
  7. Ladle the finished curry into bowls and garnish with cilantro.
