  1. Brown the beef in a skillet over medium heat for about 5-7 minutes, until no pink remains. Drain excess fat and set aside.
  2. Sauté the onion and garlic in the same skillet for approximately 3 minutes until translucent and fragrant.
  3. Combine browned beef and sautéed onion-garlic mix in the crockpot, scraping any tasty bits from the skillet.
  4. Add chicken broth, diced tomatoes, tomato paste, dried herbs, and seasoning to the crockpot. Stir thoroughly.
  5. Cover and cook on low for 7-8 hours or on high for 3-4 hours.
  6. About 30 minutes before serving, stir in broken lasagna noodles.
  7. Combine ricotta cheese and grated Parmesan in a bowl, then set aside.
  8. Stir in shredded mozzarella cheese before serving and let melt for about 5 minutes.
