Method
 

Step-by-Step Instructions
  1. Fill a large pot with water and bring it to a rolling boil. Add fresh noodles and cook according to package instructions, about 3-5 minutes. Drain and set aside.
  2. In a large skillet, heat vegetable oil over medium heat. Add ground pork, breaking it up. Cook for 5-7 minutes until browned.
  3. Lower heat and add minced garlic and ginger, sauté for 1-2 minutes until fragrant.
  4. Pour soy sauce, sesame paste, chili oil, and rice vinegar into the skillet. Stir to combine, simmer for 2 minutes.
  5. Add drained noodles to the skillet, toss for 2-3 minutes until coated in sauce.
  6. Sprinkle in Sichuan peppercorns, stir, and heat for an additional minute.
  7. Plate Dan Dan Noodles and garnish with green onions, fresh vegetables, and crushed peanuts.
