- Fill a large pot with water and bring it to a rolling boil. Add fresh noodles and cook according to package instructions, about 3-5 minutes. Drain and set aside.
- In a large skillet, heat vegetable oil over medium heat. Add ground pork, breaking it up. Cook for 5-7 minutes until browned.
- Lower heat and add minced garlic and ginger, sauté for 1-2 minutes until fragrant.
- Pour soy sauce, sesame paste, chili oil, and rice vinegar into the skillet. Stir to combine, simmer for 2 minutes.
- Add drained noodles to the skillet, toss for 2-3 minutes until coated in sauce.
- Sprinkle in Sichuan peppercorns, stir, and heat for an additional minute.
- Plate Dan Dan Noodles and garnish with green onions, fresh vegetables, and crushed peanuts.
