  • 2 medium sweet potatoes cubed
  • 1 pound ground turkey
  • 1 medium onion diced
  • 3 cloves garlic minced
  • 1 medium bell pepper diced
  • 1 can black beans drained and rinsed
  • 1 can diced tomatoes with juice
  • 1 cup corn frozen or canned
  • 2 tablespoons olive oil for sautéing
  • 1 teaspoon paprika
  • 1 teaspoon cumin
  • 1 teaspoon chili powder
  • to taste salt

  • 1 cup shredded cheddar cheese optional
  • ¼ cup fresh cilantro for garnish (optional)

Method
 

Preparation Steps
  1. Preheat your oven to 400°F (200°C).
  2. Boil salted water in a large pot and cook the cubed sweet potatoes for 10-15 minutes until fork-tender. Drain and set aside.
  3. Heat olive oil in a skillet over medium heat, sauté diced onion for 3-4 minutes until translucent.
  4. Add minced garlic and diced bell pepper, cook for 2-3 minutes until tender.
  5. Add ground turkey to skillet, breaking it apart; cook for 5-7 minutes until browned.
  6. Sprinkle paprika, cumin, chili powder, salt, and pepper into the skillet, mixing well.
  7. Stir in black beans, diced tomatoes, and corn; simmer for 5 minutes to meld flavors.
  8. Layer cooked sweet potatoes in a baking dish, pour turkey mixture over it evenly.
  9. If desired, sprinkle shredded cheddar cheese over the turkey mixture.
  10. Cover with aluminum foil and bake for 25 minutes, then uncover and bake for another 10-15 minutes until bubbly.
  11. Garnish with fresh cilantro before serving.
