- Fill a large pot with salted water and bring it to a boil. Add trottole pasta and cook according to package instructions, typically around 8-10 minutes, until al dente. Drain and set aside.
- In a large skillet, heat olive oil over medium heat. Add minced beef, seasoning with salt and pepper. Sauté for about 6-8 minutes until browned and no longer pink. Remove beef and set aside, keeping the juices in the pan.
- In the same skillet, add chopped onion and sauté for 5 minutes until translucent. Add minced garlic and cook for an additional 30 seconds.
- Pour diced tomatoes into skillet, stirring to combine. Add tomato paste, Italian seasoning, and optional red pepper flakes. Simmer for about 5 minutes.
- Return cooked minced beef to skillet, stirring to combine with sauce. Fold in cooked trottole pasta, mixing for 2-3 minutes to absorb flavors.
- Remove from heat and stir in chopped basil and parsley. Serve hot, garnished with grated parmesan cheese.
