- Preheat your oven to 325°F (163°C) and gather your ingredients.
- Heat olive oil in an oven-safe skillet over medium-high heat. Season the beef on all sides and sear for about 8–10 minutes.
- Remove the beef and sauté the sliced onion over medium heat until tender and caramelized, about 5 minutes.
- Return the beef to the skillet, add beef broth and soy sauce, and stir gently.
- Cover and roast in the oven for about 3–4 hours until the beef is tender.
- Shred the beef using two forks once it's cooked through.
- Preheat your broiler and slice the baguette pieces in half, cut-side up on a baking sheet.
- Place provolone cheese on each baguette half and broil for about 2–3 minutes until melted.
- Assemble the sandwiches by piling shredded beef onto the cheese-topped halves.
- Serve with the remaining liquid from the skillet as a dipping sauce.
