Step-by-Step Instructions
  1. Begin by cutting the beef chuck roast into 1-inch cubes and sear in a skillet until browned for about 5 minutes on all sides.
  2. In the same skillet, sauté the chopped onion and minced garlic for about 3-4 minutes until translucent, then add sliced mushrooms and cook for another 2-3 minutes.
  3. Transfer the browned beef to the slow cooker with the sautéed vegetables, beef broth, Worcestershire sauce, Dijon mustard, salt, pepper, thyme, and paprika, then stir well.
  4. Cover and cook on low for 7-8 hours or high for 4-5 hours until beef is tender.
  5. About 30 minutes before serving, mix sour cream with flour until smooth and stir into the slow cooker.
  6. Serve over egg noodles or rice and garnish with chopped parsley.
