Preparation Steps
- Preheat your oven to 400°F (200°C).
- In a mixing bowl, toss the halved baby potatoes with 2 tablespoons of olive oil, 2 teaspoons of garlic powder, 1 teaspoon of paprika, and a generous sprinkle of salt and pepper.
- Spread the seasoned baby potatoes in a single layer on one side of the prepared baking sheet.
- Place the baking sheet in the preheated oven and roast the potatoes for 15 minutes.
- While the potatoes roast, trim and chop your chosen seasonal vegetables. Toss these in the remaining olive oil with salt and pepper.
- After 15 minutes, remove the baking sheet from the oven and push the potatoes to one side.
- Arrange the salmon fillets skin-side down in the vacant area.
- Sprinkle a pinch of salt and pepper over the salmon fillets.
- Return the baking sheet to the oven and roast for an additional 15-20 minutes.
- Once cooked, remove the baking sheet and garnish with fresh lemon slices and chopped parsley.
