Method
 

Preparation Steps
  1. Preheat your oven to 400°F (200°C).
  2. In a mixing bowl, toss the halved baby potatoes with 2 tablespoons of olive oil, 2 teaspoons of garlic powder, 1 teaspoon of paprika, and a generous sprinkle of salt and pepper.
  3. Spread the seasoned baby potatoes in a single layer on one side of the prepared baking sheet.
  4. Place the baking sheet in the preheated oven and roast the potatoes for 15 minutes.
  5. While the potatoes roast, trim and chop your chosen seasonal vegetables. Toss these in the remaining olive oil with salt and pepper.
  6. After 15 minutes, remove the baking sheet from the oven and push the potatoes to one side.
  7. Arrange the salmon fillets skin-side down in the vacant area.
  8. Sprinkle a pinch of salt and pepper over the salmon fillets.
  9. Return the baking sheet to the oven and roast for an additional 15-20 minutes.
  10. Once cooked, remove the baking sheet and garnish with fresh lemon slices and chopped parsley.
