- Cook the ground beef in a large skillet over medium heat for 7-10 minutes until browned, then drain excess grease.
- Add diced onion to the skillet and sauté for 3-4 minutes until translucent.
- Mix in diced pickles, ketchup, mustard, and season with salt and pepper; cook for 2-3 minutes.
- Cool the mixture slightly and then stir in shredded cheddar cheese.
- Assemble eggrolls by placing 2 tablespoons of filling in each wrapper, folding and sealing.
- Heat vegetable oil in a deep frying pan to 350°F (175°C).
- Fry eggrolls in batches for 3-4 minutes until golden brown.
- Drain on paper towels and serve warm with additional pickles, ketchup, or mustard.
