- In a large pot over medium heat, add the chicken, beef, and pork. Season with salt, pepper, oregano, and thyme. Sauté for about 10 minutes until browned.
- In a separate pan, heat oil and add chopped onion, minced garlic, and bell pepper. Sauté for 5-7 minutes until onions are translucent.
- Add the sautéed aromatics into the pot with the browned meats, stirring for a minute to blend the flavors.
- Pour in the water, deglaze the pot, and bring to a boil over high heat.
- Reduce heat to low and cover. Simmer for about 45 minutes until the meats are fork-tender.
- Add diced potatoes, sliced plantain, and corn chunks into the pot. Stir gently to combine.
- Cover and let the stew simmer for an additional 30-40 minutes until vegetables are tender.
- Taste and adjust seasoning with salt and pepper as desired.
