Ingredients
  

For the Meat
  • 1 lb Chicken cut into pieces
  • 1 lb Beef cut into cubes
  • 1 lb Pork cut into cubes
For the Vegetables
  • 2 ears Corn cut into chunks
  • 2 large Potatoes peeled and diced
  • 1 large Plantain peeled and sliced
  • 1 medium Onion chopped
  • 2 cloves Garlic minced
  • 1 Bell Pepper chopped
For Seasoning and Cooking
  • 1 tablespoon Oregano
  • 1 tablespoon Thyme
  • 4 cups Water
  • Salt to taste
  • Pepper to taste
For Serving
  • as needed Lime Wedges for garnish

Method
 

Cooking Steps
  1. In a large pot over medium heat, add the chicken, beef, and pork. Season with salt, pepper, oregano, and thyme. Sauté for about 10 minutes until browned.
  2. In a separate pan, heat oil and add chopped onion, minced garlic, and bell pepper. Sauté for 5-7 minutes until onions are translucent.
  3. Add the sautéed aromatics into the pot with the browned meats, stirring for a minute to blend the flavors.
  4. Pour in the water, deglaze the pot, and bring to a boil over high heat.
  5. Reduce heat to low and cover. Simmer for about 45 minutes until the meats are fork-tender.
  6. Add diced potatoes, sliced plantain, and corn chunks into the pot. Stir gently to combine.
  7. Cover and let the stew simmer for an additional 30-40 minutes until vegetables are tender.
  8. Taste and adjust seasoning with salt and pepper as desired.
  9. Remove from heat and let it sit for a few minutes before serving.
  10. Ladle into bowls and serve with lime wedges.
