  • 1 tablespoon Dijon mustard
  • 4 cloves garlic, minced

Method
 

Cranberry Roast Beef Instructions
  1. Preheat your oven to 325°F (163°C). Prepare your ingredients.
  2. In a medium saucepan, combine the cranberries, beef broth, sugar, balsamic vinegar, soy sauce, Dijon mustard, and minced garlic. Bring to a gentle boil, then simmer for 10-15 minutes.
  3. Rub the beef roast with olive oil and season with salt, black pepper, thyme, and rosemary.
  4. Place the roast in a roasting pan and pour half of the cranberry sauce over it.
  5. Cover with aluminum foil and roast for 2 to 2.5 hours until cooked to desired doneness.
  6. Baste with reserved cranberry sauce about 30 minutes before done.
  7. Remove from the oven and rest for 15 minutes before slicing.
  8. Slice against the grain and serve with the reserved cranberry sauce and garnishes.
