Step-by-Step Instructions
  1. Preheat your oven to 400°F (200°C). Prick each potato with a fork to allow steam to escape during cooking.
  2. Rub potatoes with olive oil, season with salt and black pepper, then place on a baking sheet.
  3. Bake for 45 to 55 minutes until tender; test with a fork.
  4. In a skillet over medium heat, brown ground beef for 5 to 7 minutes, then stir in taco seasoning.
  5. Warm the drained black beans in a saucepan or microwave until heated through.
  6. Carefully remove baked potatoes, slice lengthwise and fluff the insides.
  7. Load each potato with seasoned beef, warmed black beans, and sprinkle cheddar cheese.
  8. Drizzle salsa over the cheese, add green onions, and a dollop of sour cream.
