- Preheat your oven to 300°F (149°C) for slow and even cooking.
- In a large pot, heat 1 tablespoon of olive oil over medium heat. Add 1 tablespoon of minced garlic and 1 chopped onion. Sauté for about 5 minutes until the onion is translucent.
- Stir in 2 cups of tomato sauce, 1 tablespoon of chipotle in adobo sauce, 1 teaspoon of paprika, 1 teaspoon of cumin, 1 teaspoon of chili powder, ½ teaspoon of salt, and ½ teaspoon of black pepper. Bring to a gentle simmer and let cook for about 10 minutes.
- Place 4 pounds of beef ribs in a large baking dish. Pour the sauce over the ribs, ensuring they are well-coated.
- Cover the baking dish tightly with aluminum foil and let bake for 3 to 4 hours.
- About 30 minutes before the cooking time is up, remove the foil to expose the ribs and allow the sauce to thicken and caramelize.
- Once tender, take the ribs out and let rest for a few minutes before serving. Garnish with fresh cilantro if desired.
