Ingredients
  

For the Salad
  • 1 cup quinoa rinsed
  • 1.75 cups water for cooking
  • 1 cup shredded carrots
  • 1 cup shredded red cabbage
  • 1 medium bell pepper sliced
  • 1 medium cucumber diced
  • 0.5 cup fresh cilantro chopped
  • 0.25 cup green onions sliced
For the Dressing
  • 2 tablespoons lime juice fresh
  • 2 tablespoons rice vinegar
  • 1 tablespoon fish sauce or soy sauce for vegetarian
  • 1 tablespoon sesame oil toasted recommended
  • 1 teaspoon brown sugar
  • 1 clove garlic minced
  • 1 small red chili pepper adjust to taste
  • 1 teaspoon salt to taste
  • 0.5 teaspoon black pepper freshly cracked
For the Topping
  • 0.33 cup peanuts chopped

Method
 

Preparation Steps
  1. Rinse quinoa under cold running water for about 30 seconds to remove bitterness.
  2. Combine rinsed quinoa with water in a medium saucepan, boil, then simmer for 15 minutes.
  3. Remove from heat, cover, and let rest for 5 minutes, then fluff quinoa.
  4. Whisk together lime juice, rice vinegar, fish sauce, sesame oil, brown sugar, garlic, red chili pepper, salt, and black pepper.
  5. In a large mixing bowl, combine cooled quinoa, carrots, cabbage, bell pepper, cucumber, cilantro, and green onions.
  6. Pour dressing over salad mixture and toss to coat everything evenly.
  7. Just before serving, sprinkle chopped peanuts on top for added crunch.
