Prepare your baking pan by lightly coating a 9x9-inch square dish with nonstick baking spray.
In a large mixing bowl, combine the crushed granola bars, melted butter, and granulated sugar. Stir until combined and resembles wet sand, then press half into the bottom of the pan.
For the filling, beat the softened cream cheese until smooth, then mix in the sweetened condensed milk, whipped topping, almond extract, and spiced rum/vanilla extract until fluffy.
Gently fold in the majority of the nonpareil sprinkles into the filling, reserving a handful for decoration.
Spread the filling over the granola crust and sprinkle the remaining granola mixture on top, pressing down lightly.
Cover with plastic wrap and freeze for 4-6 hours, or until firm.
To serve, slice with a warm knife and garnish with reserved sprinkles.
