Cooking Steps
- In a large pot, heat olive oil over medium heat. Add diced onion and minced garlic. Sauté for about 3 minutes until onion is translucent.
- Increase heat to medium-high and add ground beef, breaking it up as it cooks. Cook for 5-7 minutes until browned.
- Sprinkle in chili powder, cumin, paprika, cayenne, salt, and black pepper. Stir and let spices bloom for 2 minutes.
- Add tomato paste, stir into the mixture, then pour in diced tomatoes and beef broth. Mix thoroughly.
- Bring to a boil, then reduce heat to low. Cover and simmer for at least 1 hour, stirring occasionally.
- Stir in drained kidney beans and let simmer for an additional 10-15 minutes.
