  • 2 cups flour
  • 1 cup dashi (or water/vegetable stock)
  • 1 large egg
For the Filling
  • 2 cups shredded cabbage
  • ½ cup chopped green onions
  • 1 cup cooked seafood or meat (optional) shrimp, pork, or tofu
  • ¼ cup pickled ginger (optional)
For Frying & Serving
  • 1 tablespoon cooking oil vegetable oil preferred
  • to taste okonomiyaki sauce
  • to taste mayonnaise optional, Japanese mayonnaise preferred
  • to taste aonori (dried seaweed flakes)
  • to taste bonito flakes

Method
 

Preparation
  1. In a mixing bowl, combine flour with dashi and whisk until smooth. Add the egg and mix well.
  2. Fold in the shredded cabbage, chopped green onions, cooked seafood or meat, and pickled ginger.
  3. Heat oil in a skillet over medium heat and let it shimmer.
  4. Pour batter into the skillet, forming a pancake, and cook for 5-7 minutes until golden brown.
  5. Flip and cook the other side for another 5-7 minutes until golden brown.
  6. Transfer to a plate, drizzle with okonomiyaki sauce and mayonnaise, then sprinkle with aonori and bonito flakes.
