  • 2 tablespoons soy sauce
  • 2 tablespoons lime juice freshly squeezed
  • 1 tablespoon fish sauce
  • 1 tablespoon brown sugar
  • 1 teaspoon sriracha adjust to taste
  • 1 clove garlic minced
  • 1 tablespoon vegetable oil for grilling
Salad
  • 1 head romaine lettuce chopped
  • 1 cup cherry tomatoes halved
  • 1 small red onion thinly sliced
  • 1 medium cucumber sliced
  • 0.5 cup fresh cilantro chopped
  • 0.5 cup fresh mint chopped
  • 0.5 cup roasted peanuts chopped
Serving
  • 2 pieces lime wedges for serving

Method
 

Preparation
  1. In a small bowl, whisk together soy sauce, lime juice, fish sauce, brown sugar, sriracha, and minced garlic until combined.
  2. Pour the marinade over the flank steak in a resealable bag. Seal and refrigerate for at least 30 minutes.
  3. Heat a grill pan over medium-high heat and add vegetable oil.
  4. Grill the marinated steak for 3-5 minutes on each side for medium-rare.
  5. Let the steak rest for 5 minutes, then slice against the grain.
  6. In a large bowl, combine romaine lettuce, cherry tomatoes, red onion, cucumber, cilantro, and mint.
  7. Transfer the salad mix to a platter, top with sliced steak and sprinkle roasted peanuts on top.
  8. Serve with lime wedges on the side.
