Ingredients
  

For the Marinade
  • ¼ cup lime juice fresh
  • 2 cloves garlic minced
  • ¼ cup cilantro chopped
  • 1 teaspoon salt
For the Batter
  • 1 cup all-purpose flour
  • 2 large eggs beaten
  • 1 cup panko breadcrumbs mixed with seasonings
  • 1 teaspoon smoked paprika
  • 1 teaspoon garlic powder
  • 1 teaspoon cumin powder
  • 1 teaspoon chili powder
  • 1 teaspoon pepper
  • ½ teaspoon salt for breadcrumbs
For the Slaw
  • 2 cups shredded cabbage mix
  • 1 cup shredded carrots
  • ½ cup mayonnaise
  • 1 tablespoon lime juice for slaw
  • 2 tablespoons apple cider vinegar
  • ½ teaspoon salt for slaw
For the Fish
  • 1 pound firm white fish such as cod, tilapia, or mahi-mahi

Method
 

Marinade Preparation
  1. In a medium mixing bowl, combine lime juice, minced garlic, chopped cilantro, and salt. Whisk until smooth.
  2. Set aside to let the flavors meld.
Dredging Station Setup
  1. Prepare three bowls: one with flour, another with beaten eggs, and the last with panko breadcrumbs mixed with smoked paprika, garlic powder, cumin powder, chili powder, pepper, and salt.
Fish Coating
  1. Cut fish into strips. Coat each piece in flour, dip in eggs, then roll in panko breadcrumbs.
Slaw Preparation
  1. In a mixing bowl, combine shredded cabbage, carrots, mayonnaise, lime juice, apple cider vinegar, and salt. Toss to mix.
Cooking the Fish
  1. Preheat a skillet over medium heat and coat with oil. Cook breaded fish strips for 3-4 minutes on each side until golden brown.
  2. Transfer to paper towel-lined plate to drain.
Serving
  1. Serve crispy fish over rice or quinoa topped with vibrant slaw and optional toppings.
