- Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
- In a large mixing bowl, cream together the softened unsalted butter and powdered sugar until light and fluffy for about 3–4 minutes.
- Add the pure vanilla extract, lemon zest, and fresh lemon juice to the butter-sugar mixture and mix well.
- In a separate bowl, whisk together the all-purpose flour, salt, and baking soda.
- Gradually mix the dry ingredients into the butter mixture until just combined to maintain a soft and slightly sticky dough.
- Scoop portions of dough into 1-inch balls and place them on the prepared baking sheet, spaced 2 inches apart.
