Step-by-Step Instructions
  1. Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a large mixing bowl, cream together the softened unsalted butter and powdered sugar until light and fluffy for about 3–4 minutes.
  3. Add the pure vanilla extract, lemon zest, and fresh lemon juice to the butter-sugar mixture and mix well.
  4. In a separate bowl, whisk together the all-purpose flour, salt, and baking soda.
  5. Gradually mix the dry ingredients into the butter mixture until just combined to maintain a soft and slightly sticky dough.
  6. Scoop portions of dough into 1-inch balls and place them on the prepared baking sheet, spaced 2 inches apart.
  7. Gently flatten each ball with the bottom of a glass or your palm to about half an inch thick.
  8. Bake the cookies for 10–12 minutes until the edges are set and the bottoms are lightly golden.
